Recipes Sharing of Explore Cuisine Pasta

Here are three simple recipes sharing with you~

1. Red Lentil Rigatoni Bolognese

Ingredients for 2 serving:

Instructions: 

STEP 1

To prepare the ingredients, finely chop the brown onion, celery, carrot (peeled), garlic (peeled), and parsley. Grate the zucchini and Parmesan cheese. Drain and rinse the lentils.     
                             
STEP 2

Heat the olive oil in a medium frying pan over a medium-high heat. Add the brown onion, celery, carrot and zucchini and cook, stirring, for 7-8 minutes or until soft. Add the garlic and cook for a further 1 minute or until fragrant. Add the diced tomatoes and red wine and bring to the boil. Stir through the lentils, tomato paste and sugar. Cover with a lid and simmer over a medium-low heat for 10 minutes. Remove the lid, and cook uncovered for a further 5 minutes. Stir through half of the parsley. Season to taste with salt and pepper.       

STEP 3              

Meanwhile, bring a pot of salted water to the boil. Add the Red Lentil Rigatoni to the boiling water and cook for approximately 10 minutes or until al dente, stirring regularly to ensure the rigatoni does not stick. Drain. Stir the lentil bolognese sauce through the rigatoni.

2. Organic Chickpea Pasta salad

Organic Chickpea Pasta salad can be made in just a few minutes and enjoyed by the whole family.

3. Fusilli Vodka Sauce


Ingredients for 2 serving:

Instructions: 

In a medium high-sided sauté pan over medium heat, add Olive Oil

Add the Garlic and sauté until fragrant

Add the Tomato Paste and stir until it’s a deep rusty red

Add the Vodka and let cook off until almost no liquid is left

Add the Coconut Milk and season with Salt and Pepper

Allow mixture to simmer until thickened (5-7 min.)

Cook Chickpea Fusilli Pasta according to instructions on the package

Drain and toss with the Sauce until evenly coated. To loosen sauce, add some reserved pasta water until desired consistency

To serve, plate into bowl and garnish with fresh Basil Leaves

Cooking Tip Rinse under cold water after draining to stop the cooking
