Avocado Cucumber Soup Recipe

(adapted from the Simple Veganista)

Ingredients

  • ½ cup water
  • 1 medium avocado
  • 1 cucumber (with or without the skin)
  • ½ bunch dill
  • 1 clove garlic
  • ½  squeezed lemon
  • dash of himalayan salt
  • 1 tbsp Udo’s oil

Method:

  1. Cut cucumber into small pieces and place all ingredients in blender or food processor.
  2. Blend until creamy.
  3. Drizzle Udo’s Oil on top
  4. Serve with diced tomatoes and red onions.
