Lentil Ginger Stew
This is highly anti-inflammatory and immune boosting while providing healthy plant proteins.
Ingredients (serves 4-6)
- 2 cups chopped carrots
- 1 onion chopped
- 1 cup brussel sprouts
- 1 cup onion
- 1/2 cup red lentils soaked
- 1/2 cup hemp seeds
- 2 tbsp cold pressed coconut oil
- 2 tbsp chicken bone broth (Nutra Organics)
- 2 tsp cumin
- 1 tsp turmeric
- 1 tsp cayenne chili pepper
- 10 drops of Lemon Pharma Concentrated Ginger Drops (adjust accordingly)
- dash black pepper
- Himalayan sea salt to taste
Method
- Stir fry onions with coconut oil until lightly browned
- Add vegetables. lentils, spices and filtered water to cover the ingredients
- Cook on high until boiling then turn down to medium for 20-25 minutes
- Watch the stove carefully and stir occasionally. Add more water if needed.
- Add bone broth at the end when nearly ready.
- Serve with sourdough bread or over a bed of wild rice or vegetables
